oh my! I'm still confused over the rice issue. I've read some people here eat rice. Is perhaps brown rice beter or ALL rice a no no?
Rice does contain a trace amount of gliadin, which is a gluten protein. (Correct me if I'm wrong folks.) Since no one is the same, I'd say you'd need to test to see if you are sensitive to the small amount of gluten in rice.
I've tested both brown and white rice: brown rice caused inflammation in my joints almost immediately. So far, I've had no discernible reaction to white rice. That said, I do try to keep it below a cup per meal when have it, and mix it with protein and low carb veggies.
Because I've got other food allergies that tend to be 'silent' (namely colorants and preservatives), the plan is to have an ELISA blood test for rice, among other foods and herbs, to find out science wise what else I might be sensitive to. (Its something we're saving for.)
