What's for Dinner?

But now? I thought rice have no gluten.
Rice does not contain gluten unless it has been mixed with it somehow (gluten is sometimes used as a food additive). The potential health issues are not limited to gluten-containing foods, however. Many plant foods, including wheat and rice, contain "lectins" that can be problematic as well.

Rice does contain gluten (wild rice being the only exception) http://www.sott.net/articles/show/214322-What-is-gluten-intolerance-

The confusion is because rice doesn't contain wheat gluten but it does contain some prolamin proteins that some people have bad reactions to. What is confusing is some people who react to wheat gluten don't react to rice prolamin. Not only that, but rice has much less prolamin than wheat. So it may be worth testing yourself, tonosama, with the Ultra Simple Diet to see if you are sensitive to rice. Rice also has phytic acid, but there are ways to prepare it (soaking and souring) that can eliminate most of the phytic acid.

Thank you Mr. Premise I will try.

I have been having a little quinoa with breakfast a few times a week. I don't add anything but a small amount of salt and some D-ribose. It wouldn't sell well in prime time, but I don't watch prime time and I like it.

I had a chicken-and-veggie late lunch (finishing off what was left), and later several buckwheat crepes for "dessert."

Yesterday had one of my faves of the moment. Natural smoked haddock, with green puy lentils and spinach. So easy and really quick to do make.

Wash and put the lentils in a pan and cover with twice their volume on water add a pinch of salt and bring to the boil. then turn down the heat and simmer for 20/25 mins until soft.

While the lentils and coming to the boil, pre heat the oven to 170c / 340f (for a fan oven) and put your fish onto a tray/dish that you can cover so the cooking juices won't evaporate. The fish will take about 15mins to cook, so put it in after the lentils have been simmering for 15 mins.

Once the fish goes in wash the spinach leaves through and get a frying pan at the ready.

When the lentils are cooked (and most of the liquid has been absorbed), put some chopped garlic and black pepper into the frying pan and very quickly cook through on a medium heat, then add the lentils and a splash of balsamic vinegar or lemon which works well to balance the earthy flavour of the lentils. By then the fish should be done, so take it from the pan onto a hot plate and add the cooking juices to the lentils, add the spinach for a minute or so to soften it and serve. Its delicious! :D

Wild caught (whatever that means) salmon on the grill with wild rice cooked in stock (soaked for 2 days) with avocado on the side.

Yesterday I made grilled fish meatballs (with parsley, bay-laurel, oregano, a bit of shrimp meat, olive oil, salt, chilly, spring onion and touch of garlic), with sauerkraut salad.

Brunch today was buckwheat banana pancakes, cooked in bacon fat, with a sauce made from organic blackberry applesauce, organic light agave syrup, and ghee. Served with organic bacon on the side. The syrup is not super sweet like commercial syrup, just enough to complement the yummy bacon. :D

For dinner this evening: organic grass fed chuck roast in the crock pot, cooked with purple young potatoes (an experiment since I've never seen these before), carrots, celery, onion, garlic, bay leaves, salt, pepper, and a bit of ghee.

For fluffier pancakes: this time I aerated the flour by using two tablespoons to lift it in the air (not high, just above the rim of the mixing bowl, like you would toss a light salad.) Put in all the other dry ingredients, stir well, and fluff again. Add your liquids by folding them in like you would for muffins, just to dampen the flour. Then let the mixture sit for at least a half hour. This made very nice fluffy cakes, though they went down in spots where the banana didn't break down enough. I was in a hurry and didn't mash them well. ;) (This was an experiment, I'm sure some of the steps can be combined to make it easier.)

When making pancakes from leftover batter: you'll get fluffier cakes if you allow the batter to warm to room temp before cooking.

For lunch it was slow-oven-cooked pastured chicken (done with fresh garden rosemary, thyme, garlic) with gravy made from the stock and arrowroot, fresh garden greens saute, and leftover wild rice.

Salmon is often farmed - you found some good one. (I presently don't have that luck)

EDIT: Yes, and dinner:

Fried mackerel fillets and potatoes.

EDIT2: Second, late dinner:

Blinis (batter: blend quinoa, potato flour and sea salt in water) fried with coconut oil, had with some cinnamon.

Green salad, a piece of local grass fed beef sirloin tip roast (leftovers from last night) and broccoli soup made with chicken broth.

Been brunching lately, trying to tune into the sunrise. Today it was the last of the banana buckwheat pancakes, and bacon and chicken breast reheated in bacon drippings. Wow was that good!

Tonight will be the rest of the beef roast with the purple potatoes.
