What's for Dinner?

Leftover from the lunch. Roasted organic beef with onion, garlic, potatoes, carrots, parsley, laurel, rosemary, marjoram and chili, home produced green salad with olive oil and lemon juice

Slow cooked beef with squash, carrot, parsnip, onion and celery, cumin, marjoram, pepper, salt and green beans on the side.

Grass-fed rib eye steak with sauteed sweet potatoes, onions and collard greens in beef-fat.

Left over chicken stir fried with pre cooked quinoa, spring onion and diced cucumber (added cold at the end). Seasoned with sea salt, lots of black pepper, fresh organic lemon juice and some Dijon mustard mixed with a little water stirred in right at the end, just to warm through.

I've been eating meat almost exclusively for a couple of weeks now. I may have a couple of buckwheat blinis in the morning, and some lettuce, and a bit of friend green beans with my meat, but I'm really working on dealing with unknown inflammation.

I've just finished reading "Life Without Bread" by Christian B. Allan, Wolfgang Lutz. The main issue he talks about is carbs - that a super low-carb life is what we are designed for and what can/will ultimately heal about everything that ails ya. He strongly emphasizes the need for LOTS of saturated fats, and explains the science behind that.

The bottom line is this: no more than 72 grams of carbs per day is optimal, according to him, though I've been having a lot less than that and gradually pulling out of this hole.

I highly recommend this book for everyone. He gives special attention to thin individuals who are concerned about weight loss on a low carb diet. Apparently, insulin stimulated by carbs and low fat is the root of all the ills of our society. After what I've seen and experienced, I'm inclined to think he may be onto something.

I'm now on a gluten, dairy, raffinated sugar free diet for several weeks. I eat a lot of saturated fats.
for the claim that a gluten free diet causes one to gain weight...
my expierense so far is that I didn't gain weight rather the different is the case I lost some ponds.

Same here, though my Hubby isn't too sure its good for me yet. It seems carbs are really irritating my system....I just finished up some blinis and my joints are killing me. :( I'm thinking of just eating meat for a while and seeing if it will calm things down. (And I'll look for the book, though I don't know if Hubby will be too keen on it.)

 and thank you.

edit: just got the book on amazon. Yay!

This one's important. He also makes special mention of MS and how it benefits from low carbs/high fat. Well, duh! If you think about it, a condition that is the destruction of the FATTY sheath of nerves??!!!

Anyway, he says some important things that (as usual) are not said in other books. Obviously, we are going to have to write our own book with the best information from each of a few dozen!

Anyway, it IS like peeling an onion. You get better, then you get a reaction and have to peel off the next layer of stuff/inflammation/whatever. But progressively, everything has been taking me step by step to almost an exclusive meat diet. Interestingly, you actually eat less when you eat just meat and fat.

I've been close to this, too. I gave up on any buckwheat, quinoa or sweet potatoes about a week ago and have been eating mostly meat with small accompaniments of non-starchy veg. I've had a few slip ups (a couple of squares of dark chocolate here and there) but for the most part I think I've been under 72g of carbs (although I haven't bothered to calculate). I ordered Life Without Bread a couple of weeks ago but it hasn't shown up yet.

I'd love to help with that :)

Me too. I'm generally quite happy with only 2 meals per day lately.
