What's for Dinner?

Brunch today of blueberry buckwheat pancakes, maple smoked sausage, fresh fruit mix, and scrampled eggs.
 
Chicken breasts fryed in duck fat with couple of thin slices of lightly smoked ham and zucchini, spiced with curucuma and dry oregano. Buckwheat porridge as side dish.
 
Last night we had hamburgers and salad.

Tonight is red beans with bacon and sausage. The beans have been soaking/fermenting for 3 days.
 
Tried something new: cooked 2lb organic ground beef in bacon fat with diced garlic, salt and pepper, then added steamed spinach and two cans of coconut milk. It was good, but still tasted like it was missing something...any suggestions? :D This was served over plain rice.

Oh yes! ;) But remember that better if you buy backfat rather than lard.

That's the first time I've heard that, lux. Why is backfat better than lard?

In lard can be melted substances which can be imitation of pork fats and can contain different pollution. It sure depend of who produce lard.
 
chicken wings baked in the ofen with sweet potatoes and Quinoa as inclosure.

sweet potatoes on the buttom chicken wings on top.
put salt, black pepper and paprika powder on the chicken wings. after that put some duck fat on top.

after it is baked put the accrued fat (from the chicken wings , duck fat and sweet potatoes) on the Quina and mix it.

easy to make and very delicious ! I highly recommend it :thup:
 
"Frutti di mare" (cuttlefish, shrimps, various fish, callops, mussels and calamari rings) risotto (with black-wild rice and brown rice) with lot of spring onion,olive oil, garlic, parsley and dried tomatoes.
 
Last night we had goat sirloin chops/steaks fried in butter, rosemary, salt and pepper with a side of sautéed kale with olive oil.

Tonight I made beef stew with potatoes, carrots, and sautéed mushrooms and onions. Seasoned with redmond salt, black pepper, lovage (french celery), and lots of butter.
 
Tonight was grass fed - beef liver and onions, with yam hash browns, all fried in duck fat. May sound weird, but it was very yummy!
