What's for Dinner?

Tea tonight was a can of mackerel in brine with a mixed salad and quinoa, topped of with extra virgin olive oil and balsamic vinegar. For dessert it was shortbread made with coconut oil and butter, less any sweetener, and covered with lemon curd to counteract the sweetness of the biscuit.

Last night was a casserole dish made from ground beef/pork, sweet potatoes deep fried in pork fat, and cabbage saute.

Pork chops and quinoa here, too! And a nice upside down crumble thing that Perceval made with cherries, I think it was.

I went out to eat with some friends. I had roast chicken breast wrapped in bacon with maple jus, roasted carrots and parsnips and mashed potatoes.

3 days ago was beef pot roast with onions, taters (made in a pressure cooker), and gravy (thickened with tapioca flour). Apple tart for desert (quinoa and flax meal crust with Granny Smith apples), and some leftover quinoa shortbread cookies made with coconut oil and butter.

Yesterday was fried pork chops and acorn squash, and desert was homemade dark chocolate bar with dried blueberries in it, and some leftover tart.

Tonight was chicken breast (with skin and bones) fried in bacon fat, with white quinoa, plus leftover chocolate bar, and again some leftover tart.

Tomorrow, I don't know yet :-) Maybe a big no-bun burger and some salad. For whatever reasons, beef (and other red meats, like elk and buffalo) make my stomach feel exceptionally good.

Most nights there is usually either fresh baked quinoa crackers or quinoa drop biscuits.

Yesterday: roasted buckwheat with meat from turkey to roast potatoes, carrots and all the deep fat pig.

Today: French fries in deep fryer, to the chicken breast with spices made in the oven.

Lunch yesterday was leftover steak and sweet potato, and that was so filling that dinner was just a few pieces of baked chicken. :)

Yesterday I had for dinner boiled green beans with potatoes and carrots sautéed with fried slices of Iberian ham, three baked artichoke sprayed with extra virgin olive oil, and three steaks of grilled chicken.

Tonight is blinis burger night with potatoes and sweet potatoes french fries in duck fat serve with salad or broccoli. For desert coconut ice cream with berries.

M try your meat patties in between 2 blinis, sooo delicious. Every one who tasted it so far won't have it any others way. Taste like heaven :halo:

P.S. you may need to eat them with fork and knife or the duck fat run down your finger but what a taste.

Last night we had beef stew, in the slow cooker, with carrots, potatoes some broccoli and string beans.

Tonight, tea was soused herring with a mixed salad, topped with extra virgin olive oil. For dessert it was the rest of the 'melt in the mouth' shortbread made with coconut oil and butter, less any sweetener, and covered with lemon curd to counteract the sweetness of the biscuit, and the last of the carob coconut muffins.
