Edit: I usually store my bone broth for a week or two in the refrigerator with no apparent problems. I tried the freezer once but the broth started to deteriorate rapidly after I put it back in the refrigerator.

I tried freezing part of a batch I made once also and I got the same results. It was only okay for a day or two and then went 'funny'.

As bobsaget said, I think it depends on how much cartilage is present. When using beef thigh bones with the ball joint still intact (and the rest of the bone cut into sections) the amount of jelly produced is remarkable, a couple of inches forms into a solid layer once the broth cools down. Without it, there is less than half that and it doesn’t solidify in the same manner.

You gotta love home-made bone broth jelly when you know what it’s made from. ;)
I make mine in a crock pot as well. I was having problems with two batches that did not get. However, my last batch did gel nicely!! I add vinegar some times and forget others. However I did not add it this time. Also - the bones I used this time were different, they did have more cartilage so suspect that really is the issue. I need to make sure there is a good mix of bones!
 
It's when you can't have broth that you realise how great it is! I definitely get more headaches and joint aches without it, even though in my case, some of that will be stress. Going from having a few cups a day to none isn't good. Hope to be able to make some again soon.
 
We keep bone broth cooking in a slow cooker 24-7 . I wouldn`t know if the bone broth gels or not. I add a splash of apple cider vinegar when the batch is first started. When the broth gets low in the cooker I had distilled water to bring the level back up to the top. I use the same marrow bones and one soup bone with some meat on it for about a week, sometimes adding another soup bone towards the end of the week.

Does anyone know if the mineral content is different if it doesn`t gel? The bones are pretty soft at the end of the week so I know we getting mineral content.
 
I think the problem with not gelling up has to do with what part of the bone used. When I use the cow hooves, plus the rest of the foot, I get practically all thick gel. I made oxtails with some beef bones that yielded little tallow on top and the gel was soft. It all gels when refrigerated, although the gel is thicker when its the hoof. So far. I am making pork and veal bones next. I also put salt in first and I'm not sure if that's best. It is pink Himalayan salt. I'm not sure about what happens to the minerals this way. I also crush the bones that are soft and eat them.My dogs also eat the fat bones and broth. My 15 yr.old has lots of energy and her eyes have cleared up. She also walks up and down the stairs way better and is super alert. They get it every day, same as me. The energy has definitely changed in both of them, even in 15 degree weather.
 
I`v been getting mostly beef bones with lots of marrow in the center and pasture raised beef shank bones with some meat on them. I`ll try adding some hooves to the mix.

Bone broth is amazing!! I have been drinking it for a couple of months now, and I just realized that I have absolutely no joint pain anymore. I used to have terrible back and neck pains, and my knees were always sore. I love love love this stuff!

A thought, maybe try using ice cube trays to freeze the broth. Once the broth is frozen it can be put in another container to be stored. You would only defrost the number of cubes needed at a time.

I use a mix of grass fed pork and beef bones...I put them in my crockpot on low for 48 hours..Thats it! I add a little salt to each cup when I am ready to drink it :)
