What's for Dinner?

Tonight we had soup. Goat meat, kale, potatoes, red beans, onions and garlic.

Anniversary dinner for parents: I made pork tenderloin with crushed garlic and peppercorns, sweet potato and carrot puree, wild rice (cooked in stock), artichoke hearts in olive oil and reduced balsamic vinegar. Dessert was baked apples in buckwheat pastry. They like meals more on the traditional (and bland) side, it was a hit.

Oven roasted chicken thighs w/herbs provencal, with onions sauteed in the chicken fat and a squeeze of lemon. As an appetizer I had some homemade guacamole with buckwheat crackers.

Fish soup, wild (black) rice with onion & zucchinis and bit of organic ham. Lot of Fresh orange juice.

Breakfast: "stir fry" with leftover wild rice, refried black beans, chopped turkey bacon
Lunch: hummus and veggies, chicken broth with some pre-cooked buckwheat
Dinner: Stew with beef, potatoes, carrots. Gonna snag a green salad if I can

Big Lunch: Sirloin beef cuts (haven't cooked this in years!) deep-fried yam fritters, chopped chard w/ghee, and for dessert, that always-turns-out-perfect, buckwheat date/nut bread. Yummmm.

Chicken Curry: Chicken thighs, onion, garlic, carrot, celery, ginger, spices (instead of curry powder, which often has cayenne, a nightshade, I make my own spice mix including lots of turmeric, cumin, coriander and Chinese 5 spice), topped with cilantro and green onion. Started it on the stove top in a cast iron pot and once it boiled I transferred it to the oven to bake for about 40 minutes. Turned out great!

Added: Forgot to mention that I thickened it with blini batter!

Split pea soup with carrots, onion, butternut squash and ham. Also added some ghee and coconut oil in the pot.

Leftover beef sirloin and kasha with pork sausage deep fried in pork fat and some fresh eggs with a slice of quinoa bread.

Last night we had leftovers. Reheated goat, kale, potato and bean soup. Wild Rice with "red beans" - fermented red kidney beans, sausage, goat meat, onions, celery, garlic.
