Hi Laurentien,

Where were you able to find duck fat in this country? Inquiring minds want to know! (especially if they will ship!) :)

Here is how getting duck fat worked for me. I know someone who is a co-owner of a high quality restaurant and asked if their food supplier had duck fat. They did, came with their next order, and I bought two 3.5 pounds of duck fat for $16 each(no shipping :)) from the restaurant.

Even if you don't know someone in the restaurant business it wouldn't hurt to call and ask.

Beef burgers in buckwheat pancakes with organic ketchup (tomatoes, apple cider vinegar, concentrated grape juice, salt and pepper).

Chickpea's soup, organic beef salad with spring onion, olive oil, lemon juice, garlic and parsley, a big glass of fresh orange juice and steamed apples filled with almond - wallnuts paste with touch of vanilla.

Lunch was ground beef with half a cup of rice, this evenings dinner will be the finally thawed out porkroast, done with salt and pepper and basted with mango juice. Broccoli or spinach will be our veg. (steamed either one.) ;) Hubby was doing house maintenance, and picked up fast food while he was out. :(

(Hubby is not on the diet with me, but he eats everything I cook, and he does go out of his way to find ingredients, and places I can go out to eat with him to.)

Two lean organic steaks, fried in goose fat and seasoned with salt and pepper. Olive oil drizzled over steamed spinach.

Uhm, that's it!

Delicious!

Slow cooked beef shin bought from local farm shop with parsnips, sweet pots, stock from previous meal, pancakes and quinoa. shin is a pretty cheap cut, quite fatty but full of flavour if slow cooked.

Last night was a steak with mashed sweet potatoes and cauliflower. Tonight will be Wild Alaskan salmon, with left-over mashed sweet potatoes, and cauliflower.

Pork roast in the crock pot with stock, sweet potatoes, onions, served over cabbage saute

Tonight Hubby treated me to Olive Garden, which now has a gluten free menu. I had rice pasta with marinara sauce. It wasn't great, but its the first pasta and tomato sauce I've had in a very long time. :D (I can have tomatoes as long as I don't eat them often, and never raw.)

Tonight we had a local grass fed beef roast, steamed broccoli and roasted root veggies (carrots, beets, potatoes, onions and garlic)

Brow rice risotto on almond pumpkin seeds milk with touch of vanilla, when cold mixed with whipped cream; blackberries, strawberries and blueberries, on the top a bit of bitter chocolate :)
